DF and Mexico State are big cosmopolitan cities, with all you can find in a big city. Big shopping malls, lots of businesses, lot of traffic, a lot of people and… a lot of people.!!!
All the others are peaceful, beutiful cities that live upon the location they are; for example Veracruz is near the sea and Chihuahua is in the middle of a desert. Quintana Roo has Cancun and a lot of tourism while Yucatan is very hot climate but a growing city. Jalisco has the third biggest city in the country and Baja California has a great tourism industry going on.
There may be different accents and different foods in every state, but I guess there is not a significant cultural difference between the mexican states.
